A vibrant and flavor-packed appetizer made with beans, fresh veggies, and a zesty lime dressing.

  • 1 can (15 ounce) black beans, rinsed and drained
  • 1 can (15 ounce) black-eyed peas, rinsed and drained
  • 2 cups diced tomatoes
  • 1 jalapeño, diced
  • 1 cup corn (fresh, frozen, or canned)
  • 1 avocado, chopped
  • 1 orange bell pepper, diced
  • 1/2 cup red onion, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup olive oil
  • 1/4 cup lime juice
  • 1 tablespoon honey
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Combine the rinsed and drained black beans, black-eyed peas, diced tomatoes, jalapeño, corn, chopped avocado, bell pepper, red onion, and fresh cilantro in a large bowl.
  2. Mix together the olive oil, lime juice, honey, chili powder, cumin, salt, and pepper in a small bowl to create the dressing.
  3. Pour the dressing over the vegetable and bean mixture, and gently toss to coat everything evenly.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld and the ingredients to chill.

Notes

Serve with tortilla chips or as a side with grilled meats or tacos. Store in an airtight container for up to 3 days. Add avocado just before serving to maintain freshness.
