  • 4 cups whole milk
  • 1 can (14 ounces) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup raisins (optional)
  • Zest of 1 lemon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 2-quart baking dish.
  2. Rinse the uncooked rice under cold water until the water runs clear.
  3. Combine the rinsed rice with whole milk, sweetened condensed milk, vanilla extract, ground cinnamon, and salt in a large mixing bowl.
  4. Beat the eggs in a separate bowl until well combined, then gradually add them to the rice mixture.
  5. Add the optional raisins and lemon zest, folding them into the mixture.
  6. Pour the rice mixture into the prepared baking dish, spreading it evenly.
  7. Bake for 50-60 minutes, stirring halfway through.
  8. Check for consistency; it should be set and slightly golden on top.
  9. Let it cool for 15-30 minutes before serving.
  10. Serve warm or chilled, as desired.
