A delicious and nutritious pudding made with chia seeds, banana, and peanut butter, perfect for breakfast or a snack.

Ingredients

Scale
  • 1 cup almond milk
  • 1/2 ripe banana
  • 1/4 cup chia seeds
  • 1 tbsp maple syrup (optional)
  • 1 tsp vanilla extract
  • 1 tbsp peanut butter (for topping)

Instructions

  1. Blend your base: In a blender, combine the almond milk, half of the ripe banana, maple syrup (if you’re feeling sweet), and vanilla extract. Blend until smooth and creamy, creating a luscious base for your pudding.
  2. Mix in the magic seeds: Pour the blended mixture into a jar or bowl. Stir in the chia seeds until they are well combined – this is where the magic really begins.
  3. Chill & set: Cover your jar or bowl and refrigerate overnight. This allows the chia seeds to plump up and thicken the pudding.
  4. Drizzle some delight: When you’re ready to enjoy, add a generous dollop of peanut butter on top. For an extra decadent touch, soften the peanut butter in the microwave for about 10 seconds.

Notes

Store any leftover pudding in the refrigerator, covered, for up to 3 days. Stir before serving and add almond milk if it’s thickened too much.
