A comforting and creamy broccoli cheddar soup, perfect for chilly days!

Ingredients

  • 2 cups broccoli florets
  • 1 cup sharp cheddar cheese, shredded
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Sauté the onions and garlic in melted butter until softened, about 4-5 minutes.
  2. Add the broccoli florets and broth; bring to a boil then simmer until the broccoli is tender, about 10-15 minutes.
  3. Blend the soup until creamy using an immersion blender or regular blender.
  4. Stir in heavy cream and cheddar cheese until melted and combined.
  5. Season with salt and pepper to taste.
  6. Serve hot in bowls with optional toppings.

Notes
