  • 1 lb shrimp, peeled and deveined
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Boil the pasta according to package instructions; drain and set aside.
  2. Sauté the onion, bell pepper, and garlic in olive oil over medium heat until softened.
  3. Cook the shrimp with Cajun seasoning until pink and opaque.
  4. Create the sauce by adding chicken broth, then stirring in heavy cream and Parmesan until thickened.
  5. Combine the cooked pasta with the sauce, seasoning with salt and pepper.
  6. Garnish with fresh parsley and serve.

Notes

Avoid overcooking the shrimp to maintain tenderness. Substitute shrimp with chicken or add spinach for extra veggies. For heat, include cayenne pepper.
