  • 2 medium butternut squashes, peeled and diced
  • 2 cups shredded cheese (cheddar or a blend)
  • 1 cup heavy cream
  • 1 cup breadcrumbs
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh herbs (optional for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Boil the diced butternut squash until tender, about 10-15 minutes. Drain and mash to a creamy consistency.
  3. Mix the mashed squash with shredded cheese, heavy cream, garlic powder, salt, and pepper until well blended.
  4. Transfer the mixture to a greased casserole dish, spreading it evenly.
  5. Prepare the breadcrumb topping by mixing breadcrumbs with olive oil and sprinkle it on top of the squash mixture.
  6. Bake in the preheated oven for 25-30 minutes until golden and bubbly.
  7. Garnish with fresh herbs if desired, and serve warm.
