  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons butter, divided
  • 1 cup sliced mushrooms
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup orzo
  • 1/2 cup Marsala wine
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Optional: Chopped parsley for serving

Instructions

  1. Seasoning the Chicken: Start by seasoning your chicken breasts with salt and black pepper, allowing each piece to soak in the flavors before hitting the skillet.
  2. Searing the Chicken: Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Cook the chicken for 5-6 minutes until it’s nicely browned and cooked through. Once done, remove the chicken from the skillet and set it aside on a plate.
  3. Sautéing the Vegetables: Add the remaining 1 tablespoon of butter to the same skillet. Toss in the sliced mushrooms and chopped onion, sautéing for 6-8 minutes until the mushrooms are beautifully browned.
  4. Adding Garlic: Next, add the minced garlic to the skillet and cook for an additional 30 seconds.
  5. Stirring in the Orzo: Now, it’s time to stir in the orzo. Give it a minute to toast slightly.
  6. Incorporating Marsala Wine: Pour in the Marsala wine and let it simmer for 1-2 minutes to reduce slightly.
  7. Adding Chicken Broth: Add the chicken broth to the skillet, bringing the mixture to a gentle simmer. Cook for 10-12 minutes, stirring often until the orzo is tender and most of the liquid is absorbed.
  8. Mixing in Cream and Cheese: Reduce the heat and stir in the heavy cream and Parmesan cheese until the sauce becomes creamy and smooth.
  9. Bringing it All Together: Gently fold the cooked chicken back into the skillet, warming it through while stirring gently to combine everything perfectly.
  10. Garnishing and Serving: Garnish your Chicken Marsala Orzo with chopped parsley, if desired, and serve hot.

Notes

For best flavor, serve with a side salad and a crisp white wine. Adjust cream to taste and consider adding spinach or peas for a twist.
