A quick and hearty casserole featuring creamy cottage cheese and shredded chicken, perfect for a comforting weeknight meal.

Ingredients

  • 2 ½ cups Cooked chicken, shredded (Rotisserie is perfect)
  • 1 ½ cups Cottage cheese (Full fat/4% works best)
  • 1/3 cup Chicken broth
  • 1 tablespoon Cornstarch
  • 1 teaspoon Garlic powder
  • ½ teaspoon Onion powder
  • Salt and black pepper to taste
  • 1 cup Shredded mozzarella cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grease a 9×9 baking dish.
  3. Make the sauce by whisking or blending cottage cheese, broth, cornstarch, and spices together.
  4. Combine shredded chicken with the sauce until heavily coated.
  5. Spread the chicken mixture into your prepared dish and top with mozzarella cheese.
  6. Bake uncovered for 30–35 minutes.
  7. Let it cool for 5–10 minutes before serving.

Notes
