  • 1/2 cup dried cranberries
  • 1 cup crumbled feta cheese
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 teaspoon lemon zest
  • Salt to taste
  • Freshly ground black pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook the rigatoni according to the package instructions. Add salt to the boiling water. Drain and rinse under cold water to stop cooking.
  2. Whisk together mayonnaise, Greek yogurt, lemon juice, honey, lemon zest, salt, and pepper in a large bowl until smooth.
  3. Add the cooled rigatoni, dried cranberries, crumbled feta, and chopped parsley to the bowl. Toss until evenly coated in the dressing.
  4. Season the salad to taste with additional salt, pepper, or honey as desired.
  5. Chill the salad for at least 30 minutes in the refrigerator to allow flavors to meld.
