A creamy lemon orzo dish filled with fresh spinach and nutty Parmesan, perfect as a main or side dish.

Ingredients

  • 1 cup Orzo pasta
  • 4 cups Chicken or vegetable broth
  • 1 cup Heavy cream
  • 1/2 cup Parmesan cheese
  • 2 cups Fresh spinach
  • 1 each Lemon zest and juice
  • 2 cloves Garlic, minced
  • 1 tablespoon Olive oil
  • 1/4 teaspoon Red pepper flakes
  • 1/4 cup Fresh herbs (parsley or basil)

Instructions

  1. Sauté the garlic in olive oil over medium heat until fragrant.
  2. Pour in the orzo and stir it around, toasting for 1-2 minutes.
  3. Add the chicken or vegetable broth and bring to a gentle boil.
  4. Allow the orzo to simmer for about 10-12 minutes until tender.
  5. Reduce the heat to low and stir in the heavy cream.
  6. Incorporate the Parmesan cheese, lemon zest, and lemon juice until well combined.
  7. Fold in the fresh spinach and let it wilt slightly.
  8. Season with red pepper flakes and adjust seasoning with salt and pepper to taste.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of broth to loosen the sauce.
