  • 2 cups elbow macaroni
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt

  • to taste breadcrumbs
  • to taste parsley

Instructions

  1. Start by bringing a pot of salted water to a boil. Add the elbow macaroni and cook until al dente, following the package instructions. Drain and set aside.
  2. In a large saucepan over medium heat, melt the unsalted butter. Once melted, sprinkle in the flour, whisking continuously for about 1 minute.
  3. Gradually whisk in the whole milk, stirring constantly to prevent lumps until it starts to bubble gently.
  4. Once thickened, reduce heat to low and gradually add the cheddar and mozzarella, stirring until melted.
  5. Sprinkle in the garlic powder, onion powder, salt, and pepper to taste.
  6. Add the cooked macaroni into the cheese sauce, stirring until every piece is coated.
  7. If desired, preheat oven to 350°F (175°C), pour mixture into a greased baking dish, top with breadcrumbs, and bake for about 20 minutes.
  8. Garnish with freshly chopped parsley before serving.

Notes

For a crispy topping, bake after combining with the cheese sauce. Store leftovers in an airtight container in the refrigerator.
