  • 1 pound boneless, skinless chicken breasts
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups fresh spinach, chopped
  • ½ cup grated Parmesan cheese
  • Fresh parsley, for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Add the chicken breasts and cook until browned on both sides, approximately 5-7 minutes. Remove and set aside.
  3. Sauté the diced onion, carrots, and celery in the same pot until they soften, about 5 minutes.
  4. Stir in the minced garlic and cook for an additional minute until fragrant.
  5. Pour in the chicken broth and bring the mixture to a boil.
  6. Shred the cooked chicken into bite-sized pieces.
  7. Return the shredded chicken to the pot. Add Italian seasoning, salt, and black pepper.
  8. Reduce the heat to low and slowly add the heavy cream, stirring until well combined.
  9. Mix in the chopped spinach and cook until wilted, about 2 minutes.
  10. Stir in the grated Parmesan cheese until melted and incorporated.
  11. Ladle the soup into bowls and garnish with fresh parsley. Enjoy!
