Ingredients

  • 1 cup Arborio rice
  • 4 cups vegetable or chicken broth
  • 1 cup mushrooms, sliced
  • 2 cups fresh spinach
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the broth in a saucepan and keep it warm.
  2. Sauté the onions and garlic in olive oil until translucent.
  3. Add the mushrooms and cook until they release their juice, about 5 minutes.
  4. Toast the Arborio rice for 1-2 minutes until lightly toasted.
  5. Gradually add the warm broth, one ladle at a time, stirring frequently until absorbed.
  6. Finalize with fresh spinach and Parmesan cheese until spinach wilts. Season with salt and pepper.
  7. Serve warm and enjoy!

Notes

For added creaminess, consider a splash of cream or a dollop of mascarpone cheese before serving.
