  • 2 cups Vegetable broth
  • 1 tablespoon Olive oil
  • 8 ounces Cremini mushrooms
  • 2 medium Fresh tomatoes
  • 2 cloves Garlic
  • 1 teaspoon Fresh thyme
  • 1 tablespoon Fresh parsley
  • To taste Salt
  • To taste Pepper

Instructions

  1. Toast the rice by heating the olive oil in a pot over medium heat.
  2. Add the long-grain white rice and toast it for about 2-3 minutes.
  3. Toss in the cremini mushrooms and cook for 5-7 minutes until golden brown.
  4. Add the minced garlic and fresh thyme, sautéing for an additional minute.
  5. Pour in the vegetable broth and bring to a gentle boil.
  6. Incorporate the toasted rice back into the pot, stirring gently.
  7. Stir in your diced fresh tomatoes with 5 minutes left of cooking.
  8. Season with salt and pepper to taste before serving.
  9. Garnish with freshly chopped parsley before serving!
