Ingredients

  • 12 ounces chicken sausage, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup orzo
  • 2 cups chicken broth
  • 1 cup milk
  • 2 cups broccoli florets
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add chicken sausage slices and cook until browned, about 5 minutes.
  3. Stir in diced onion and minced garlic, cooking until fragrant and softened, about 2 minutes.
  4. Add orzo, chicken broth, and milk, bringing it all to a gentle simmer.
  5. Cover the pot and cook for 8 to 10 minutes, stirring occasionally to prevent sticking.
  6. Uncover and add broccoli florets and grated Parmesan cheese, stirring until the cheese melts and the broccoli is tender, about 3 to 4 minutes.
  7. Season with salt and black pepper, stirring to combine.
  8. Serve immediately, garnishing with extra Parmesan or chopped parsley if desired.

Notes

For a lighter version, substitute half of the milk with water or a milk alternative. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
