  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Fresh basil for garnish

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium heat.
  3. Cook the chicken for 7-8 minutes on each side until golden brown and cooked through.
  4. Sauté minced garlic and halved cherry tomatoes for 2-3 minutes.
  5. Add spinach and cook until wilted.
  6. Combine heavy cream, Parmesan cheese, and Italian seasoning; bring to a simmer.
  7. Return cooked chicken to the skillet, cover with the sauce, and simmer for an additional 3-4 minutes.
  8. Garnish with fresh basil before serving.
