A delightful dish that transforms simple eggplant into a crispy, flavorful treat, perfect for snacks or sides.

Ingredients

  • 1 large eggplant
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 eggs
  • Olive oil spray

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the eggplant into 1/2-inch rounds.
  3. Mix together the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, and black pepper.
  4. Prepare the egg wash by beating the eggs until well combined.
  5. Coat each eggplant slice in the egg wash and then in the breadcrumb mixture.
  6. Arrange the coated slices on a baking sheet lined with parchment paper.
  7. Add a light spray of olive oil on top of the slices.
  8. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.
  9. Serve warm as a snack or side dish.
