  • 2 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 8 oz pasta (your choice)
  • 1 cup pesto sauce
  • Salt and pepper to taste
  • Olive oil
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix together breadcrumbs and grated Parmesan cheese in a bowl, and season with salt and pepper.
  3. Dredge each chicken breast in the breadcrumb mixture, pressing to coat thoroughly.
  4. Heat olive oil in a skillet over medium-high heat and cook the breaded chicken for about 5 minutes on each side until golden brown.
  5. Transfer the cooked chicken to a baking sheet and bake in the oven for 10-15 minutes until cooked through.
  6. Boil salted water in a pot and cook the pasta according to package instructions until al dente, then drain.
  7. Stir the pesto sauce into the drained pasta until well coated.
  8. Plate the pesto pasta and top with the crispy chicken. Garnish with fresh basil, if desired.

Notes

For extra crispiness, ensure the oil is hot before cooking the chicken. You can also add vegetables or try different types of pesto for variety.
