  • 3 tbsp olive oil
  • 1 tbsp mixed herbs (e.g., rosemary, thyme)
  • 1 tsp mixed spices (e.g., paprika, garlic powder)
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Boil the new potatoes in salted water until fork-tender, about 15-20 minutes.
  3. Cool the potatoes and let them sit until easier to handle.
  4. Smash each potato on a baking sheet with the bottom of a cup or a fork.
