A delightful crispy tofu stir fry packed with vibrant vegetables and rich flavors, perfect for a healthy meal.

Ingredients

  • 16 oz firm tofu
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, etc.)
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon cornstarch
  • 1 clove garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • Sesame seeds (optional for garnish)

Instructions

  1. Drain and press the tofu to remove excess moisture. Cut the tofu into cubes.
  2. Toss the tofu cubes in cornstarch until evenly coated.
  3. Heat the vegetable oil in a large pan over medium-high heat.
  4. Add the coated tofu and cook until crispy and golden brown, about 10 minutes.
  5. Remove the tofu from the pan and set aside.
  6. Add minced garlic and ginger to the same pan and sauté until fragrant, about 30 seconds.
  7. Stir-fry the mixed vegetables until tender but still vibrant, about 3-5 minutes.
  8. Return the crispy tofu to the pan and drizzle soy sauce over everything.
  9. Stir well to combine and season with salt and pepper to taste.
  10. Serve hot, garnished with sesame seeds if desired.

Notes

For extra crunch, fry the tofu in batches. Store leftovers in an airtight container for up to 3 days.
