  • 34 cups chopped green cabbage
  • 12 cups green beans, cut into 1-inch pieces
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 1 small zucchini, diced
  • 1 red bell pepper, chopped
  • 1 (15-ounce) can diced tomatoes
  • 12 teaspoons minced garlic
  • 2 tablespoons tomato paste
  • 1 teaspoon Italian seasoning
  • Kosher salt, to taste
  • Ground black pepper, to taste
  • 1 (32-ounce) package nonfat vegetable broth, beef broth, or chicken broth
  • 12 cups chopped spinach
  • For serving: Freshly chopped basil or parsley

Instructions

  1. Prepare the vegetables by adding the chopped onion, green cabbage, green beans, celery, carrots, zucchini, bell pepper, and garlic to the slow cooker.
  2. Combine with the diced tomatoes and tomato paste, stirring well.
  3. Season with Italian seasoning, kosher salt, and black pepper.
  4. Pour in your chosen broth.
  5. Slow cook on high for 4 to 5 hours or low for 7 to 8 hours.
  6. Finish by stirring in the chopped spinach just before serving.
  7. Season to taste with additional salt and pepper, if needed.
  8. Serve in bowls with a sprinkle of freshly chopped basil or parsley.
