A warm and cheesy casserole perfect for busy evenings, easily prepared in a crockpot.

  • 2 lbs boneless, skinless chicken breast, cut into chunks
  • 8 oz spaghetti pasta
  • 1 can cream of chicken soup (10.5 oz)
  • 1 can diced tomatoes with green chilies (10 oz)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tbsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions

  1. Start by preparing all your ingredients. Cut the chicken breast into bite-sized chunks and set them aside.
  2. In your trusty crockpot, layer the chicken chunks at the bottom. Next, add the cream of chicken soup and the diced tomatoes with green chilies.
  3. Cover the crockpot and set it to low for 6 hours or high for about 3 hours.
  4. Once your chicken is cooked, break the spaghetti in half and stir it into the mixture.
  5. Stir in the cheddar and mozzarella, allowing them to melt into the dish.
  6. Scoop out generous portions and serve hot, garnished with fresh parsley.

Notes

For variations, use different pasta shapes or add vegetables like bell peppers. Leftovers can be stored in the fridge for up to three days or frozen for longer.
