A hearty and comforting dish that combines classic pizza flavors into a low-carb, high-protein bowl.

Ingredients

  • 1 lb ground sausage
  • 1 cup mozzarella cheese, shredded
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 1 cup mushrooms, sliced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the ground sausage to the skillet and cook until browned, about 5 minutes.
  3. Toss in the diced bell pepper, zucchini, and sliced mushrooms. Sauté for 5-7 minutes until tender.
  4. Stir in the Italian seasoning, adding salt and pepper to taste.
  5. Transfer the mixture to a baking dish.
  6. Sprinkle a layer of mozzarella cheese over the top.
  7. Bake at 375°F (190°C) for 15-20 minutes or until the cheese is bubbly and golden.
  8. Allow to cool slightly before serving.

Notes

Pairs well with a green salad or roasted vegetables. Can be stored for up to 3 days in the fridge.
