A creamy, satisfying alternative to classic Chicken Alfredo, made with cashew sauce and shredded chicken for a deliciously healthy meal.

Ingredients

  • 2 cups cashews (soaked for at least 2 hours)
  • 1 cup vegetable broth
  • 2 tablespoons nutritional yeast
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 cups cooked chicken, shredded
  • 8 oz pasta of choice

Instructions

  1. Drain and rinse the soaked cashews. In a blender, combine the cashews, vegetable broth, nutritional yeast, garlic, olive oil, salt, and pepper. Blend until smooth and creamy.
  2. Add the shredded chicken to a large skillet over medium heat. Pour the cashew sauce over the chicken and stir to combine.
  3. Cook your pasta according to package instructions. Save some pasta water for a creamier sauce if needed. Drain the pasta and set aside.
  4. Serve the cashew chicken Alfredo sauce generously over the pasta and enjoy!

Notes

Pairs wonderfully with a crisp green salad or roasted veggies. Store leftovers in an airtight container in the fridge for up to three days.
