  • Cocoa powder, for dusting
  • Chocolate shavings or finely chopped nuts (optional, for coating)

Instructions

  1. Chop the dark chocolate into small, even pieces and place in a heatproof bowl.
  2. Prepare a mixture of heavy cream, instant espresso powder, and sea salt in a saucepan over medium heat until simmering.
  3. Combine the simmering cream over the chopped chocolate and let sit for 2-3 minutes.
  4. Stir the mixture gently until smooth, then add the unsalted butter and vanilla extract, stirring until incorporated.
  5. Cool the ganache to room temperature, cover, and refrigerate for about 2 hours until firm.
  6. Scoop small amounts of ganache (about 1 tablespoon) and roll into balls using your hands.
  7. Roll the truffles in cocoa powder until evenly coated, optionally using chocolate shavings or nuts.
  8. Firm up the truffles by refrigerating for an additional 30 minutes.
