  • 2 cups of your favorite pasta
  • 1 pound of chicken breast, diced
  • 2 cups of fresh spinach
  • 1 cup of cherry tomatoes, halved
  • 3 cloves of garlic, minced
  • 1 teaspoon of dried basil
  • 2 tablespoons of olive oil
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken and season with salt, pepper, and dried basil. Cook until the chicken is browned and fully cooked, about 5-7 minutes.
  3. Once the chicken is cooked, add the minced garlic and sauté for an additional minute, allowing the flavors to bloom.
  4. Add the cherry tomatoes and spinach to the skillet. Stir frequently until the spinach wilts and the tomatoes begin to soften, about 3-4 minutes.
  5. Add the drained pasta to the skillet, tossing everything together gently until well combined and heated through.
  6. Taste and adjust the seasoning if necessary. Serve hot, topped with grated Parmesan cheese.

Notes

To save time, chop the vegetables ahead of time or use pre-diced chicken from the store. This recipe is highly adaptable; feel free to experiment with different vegetables or proteins.
