  • 1 cup crushed pineapple (drained)
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon gelatin powder
  • 2 tablespoons water
  • Whipped cream (for topping)
  • Shredded coconut (for garnish)

Instructions

  1. Bloom the gelatin: In a small bowl, sprinkle the gelatin over the water. Let it sit for a few minutes to allow the gelatin to bloom.
  2. Combine the coconut cream mixture: In a mixing bowl, combine the coconut cream, crushed pineapple, sugar, and vanilla extract. Stir until well blended.
  3. Dissolve the gelatin: Heat the bloomed gelatin in the microwave for about 10 seconds until it dissolves. Mix this into your coconut mixture.
  4. Chill until set: Pour the mixture into serving dishes and chill in the refrigerator for at least 2 hours until it sets.
