Delicious and nutritious bite-sized energy balls made with Medjool dates, raw almonds, and shredded coconut.

  • 12 Medjool Dates (soft, pitted)
  • 1 cup Shredded Coconut (unsweetened)
  • 1/2 cup Raw Almonds
  • 2 tablespoons Chia Seeds
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Sea Salt
  • 1/2 cup Extra Shredded Coconut (for coating)
  • 2 tablespoons Cocoa Powder (optional)

Instructions

  1. Prepare the Ingredients: Begin by collecting all your ingredients. If your dates aren’t already pitted, remove the pits and chop them roughly to help the blending process.
  2. Blend the Base Mixture: In your food processor, add the Medjool dates, shredded coconut, raw almonds, chia seeds, vanilla extract, and sea salt. Pulse these ingredients together until the mixture is well combined and sticky. It should hold together when you press it between your fingers.
  3. Shape the Bliss Balls: Once your mixture is ready, it’s time to roll! Take small amounts of the mixture (about a tablespoon) and roll them between your palms to form small balls.
  4. Coat the Bliss Balls: If you’re opting for a chocolatey twist, shake some cocoa powder on a plate and roll half of your bliss balls in it. For the others, roll them in the extra shredded coconut to give that delightful texture.
  5. Chill and Enjoy: Place your bliss balls on a tray and refrigerate them for about 30 minutes. This helps them firm up a bit and makes them even more enjoyable.

Store your bliss balls in an airtight container in the fridge for up to two weeks or freeze them for longer storage.
