  • 1 cup orzo pasta
  • 8 ounces cremini or button mushrooms, sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 medium shallot, finely chopped
  • 3/4 cup heavy cream
  • 1/2 cup Parmesan cheese, freshly grated
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley, chopped
  • Salt to taste
  • Black pepper to taste
  • Optional: red pepper flakes

Instructions

  1. Boil the orzo by bringing a pot of salted water to a boil. Cook according to package instructions, about 8-10 minutes, until al dente. Drain and set aside.
  2. Sauté the aromatics in a large skillet over medium heat with olive oil. Add shallot and garlic, and sauté for 2-3 minutes until shallots are translucent.
  3. Cook the mushrooms by adding them to the pan and cooking for 5-7 minutes until golden and tender.
  4. Create the creamy sauce by lowering the heat and pouring in the heavy cream. Stir continuously, then add Parmesan cheese until melted and smooth.
  5. Infuse with lemon by stirring in lemon zest and juice, then seasoning with salt, black pepper, and optional red pepper flakes.
  6. Combine the cooked orzo with the sauce, mixing until fully combined. Heat through for about 2 minutes.
  7. Garnish and serve hot, sprinkling with fresh parsley and stirring gently.

Notes

Pairs well with roasted asparagus or a crisp salad. For extra lemon flavor, use a zester to create fine lemon zest.
