Instructions

  1. Whisk the Egg Mixture: In a large bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  2. Sauté the Eggs: Heat vegetable oil in a skillet, pour in the egg mixture, stirring until the eggs are set but still moist, about 5-7 minutes. Remove and set aside.
  3. Warm the Tortillas: Warm tortillas in a skillet or microwave for a few seconds.
  4. Assemble the Burritos: Lay each tortilla flat and layer with scrambled eggs, sausage, cheddar, and Monterey Jack cheese.
  5. Roll It Up: Fold in the sides and roll tightly from the bottom up to form a burrito.
  6. Wrap for Freezing: Wrap each burrito tightly in plastic wrap, then in aluminum foil.
  7. Freeze the Burritos: Place wrapped burritos in a freezer-safe bag or container.
