A delicious roast chicken infused with garlic, fennel, and lemon for a comforting family meal.

Ingredients

  • 1 whole chicken (45 pounds)
  • 1/2 cup unsalted butter (softened)
  • 4 cloves fresh garlic (minced finely)
  • 1 whole fresh fennel bulb (thinly sliced)
  • 1 each lemon (zest and juice)
  • 5 sprigs fresh thyme
  • to taste salt
  • to taste black pepper
  • 1/4 cup fresh parsley (chopped)
  • 1 each lemon wedges (for serving)

Instructions

  1. Preheat your oven to 425°F (220°C). Rinse your chicken under cool water, then pat it dry thoroughly with paper towels.
  2. In a bowl, combine your softened butter, minced garlic, lemon zest, and a sprinkle of salt and pepper. Use a fork to mix them all together.
  3. Carefully separate the skin from the chicken breast and spread the herb butter beneath the skin.
  4. Stuff the cavity of the chicken with fennel slices and fresh thyme.
  5. Season the outside of the chicken with salt and pepper, place it in a roasting pan, and roast for about 1 hour and 15 minutes.
  6. Remove the chicken from the oven and let it rest for 15 minutes.
  7. Carve the chicken and garnish with chopped fresh parsley and lemon wedges.

Notes

For extra crispiness, broil the chicken for the last 5 minutes of cooking time. This recipe is naturally gluten-free.
