  • 1/4 cup granulated sugar
  • 15 oz ricotta cheese
  • 8 oz cream cheese
  • 1/2 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp powdered sugar
  • 1 cup fresh berries

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine the graham cracker crumbs, melted butter, and 1/4 cup of granulated sugar.
  3. Press the mixture into the bottom of an 8×8 inch baking pan to form a solid crust.
  4. Bake for 10 minutes, until just golden, then let cool slightly.
  5. Blend the ricotta cheese and cream cheese until smooth.
  6. Add 1/2 cup of granulated sugar, lemon juice, lemon zest, and vanilla extract.
  7. Incorporate the eggs one at a time, mixing until fully combined.
  8. Pour the filling over the crust and spread evenly.
  9. Bake for 25-30 minutes, until the edges are set.
  10. Cool at room temperature, then refrigerate for at least 2 hours.
  11. Dust with powdered sugar before serving.
