  • 4 large baking apples (Granny Smith or Honeycrisp preferred)
  • 1/4 cup pure maple syrup
  • 1 teaspoon ground cinnamon
  • 1 tablespoon fresh lemon juice
  • 1/2 cup chopped nuts (Walnuts or pecans)
  • 1/4 cup rolled oats (Optional)
  • 2 tablespoons unsalted butter
  • 1 scoop vanilla ice cream or Greek yogurt (for serving)
  • 1 pinch nutmeg (Optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Wash the apples thoroughly and core them.
  3. Drizzle the fresh lemon juice inside the apple cores.
  4. In a bowl, mix together the chopped nuts, rolled oats, maple syrup, cinnamon, and nutmeg.
  5. Spoon the nutty mixture into each apple core.
  6. Place a small dot of unsalted butter on top of the filling.
  7. Arrange the filled apples in a baking dish and pour a little water around them.
  8. Bake for 25-30 minutes until tender.
  9. Remove from the oven and let cool slightly.
  10. Serve with a scoop of vanilla ice cream or Greek yogurt.

Notes

For a vegan option, replace butter with coconut oil or omit it entirely. Experiment with different nuts and spices as desired.
