A comforting one-pot meal that combines the rich flavors of classic lasagna with the warmth of a soup, perfect for busy evenings.

Ingredients

  • 1 lb ground beef or Italian sausage
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef or vegetable broth
  • 2 cups uncooked pasta (like fusilli or shells)
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • Fresh basil for garnish

Instructions

  1. Brown the ground beef or sausage over medium heat. Add the onion and garlic, cooking until the onion is translucent.
  2. Stir in the tomato sauce, diced tomatoes, broth, pasta, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer until the pasta is cooked.
  3. Once the pasta is done, stir in the ricotta cheese and half of the mozzarella until melted and well combined.
  4. Serve hot with the remaining mozzarella on top and garnish with fresh basil.

Notes

For a lighter version, substitute lean ground turkey or chicken. You can add spinach or kale for extra veggies.
