A warm and creamy pasta dish that combines the flavors of miso and garlic in a one-pot recipe.

Ingredients

Scale
  • 8 ounces Spaghetti or linguine
  • 45 cups Water or broth
  • 1 teaspoon Salt
  • 3 tablespoons White miso paste
  • 4 tablespoons Unsalted butter
  • 2 cloves Garlic, minced
  • 2 stalks Green onions, thinly sliced
  • 1 tablespoon Sesame seeds (optional)
  • to taste Black pepper

Instructions

  1. Boil the Pasta: In a large pot, bring 4-5 cups of water or broth to a rolling boil. Add in 1 teaspoon of salt. Once bubbling, add spaghetti or linguine and cook according to package instructions until al dente, usually around 7-9 minutes.
  2. Sauté the Garlic: In a small pan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  3. Combine the Miso: Once the pasta is cooked, reserve about 1 cup of the cooking liquid and drain the rest. Return pasta to the pot and mix in sautéed garlic and melted butter. Stir in white miso paste until fully incorporated.
  4. Adjust the Consistency: Gradually add the reserved pasta water until you reach the desired consistency.
  5. Finish with Garnishes: Remove from heat and stir in green onions. Season with black pepper and sprinkle sesame seeds, if using.

Notes

Use broth instead of water for added flavor. Store leftovers in an airtight container for up to 3 days.
