  • 2 fillets sea bass
  • 1/2 cup shelled pistachios
  • 1/2 cup panko breadcrumbs
  • 1/4 cup Parmesan cheese
  • 1 teaspoon fresh lemon zest
  • 1 large egg
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the pistachio mixture by combining toasted pistachios, panko, Parmesan, lemon zest, salt, and pepper in a food processor.
  3. Coat the sea bass by dipping each fillet in beaten egg.
  4. Apply the crust by pressing the egg-coated fillets into the pistachio mixture.
  5. Sear the fish in a hot skillet with olive oil for about 2-3 minutes until golden brown.
  6. Bake the sea bass in the oven for 10-12 minutes until cooked through.
  7. Plate and serve with a sprinkle of fresh herbs.
