  • 2 tablespoons Fresh ginger root (finely grated)
  • 3 tablespoons Soy sauce (low-sodium)
  • 1 tablespoon Sesame oil
  • 1 tablespoon Honey
  • 2 cloves Garlic (minced)
  • 1 tablespoon Rice vinegar
  • 2 tablespoons Toasted sesame seeds
  • 2 scallions (thinly sliced)
  • 1 lemon (for serving)

Instructions

  1. Prepare the Marinade: In a mixing bowl, combine the freshly grated ginger, soy sauce, sesame oil, honey, minced garlic, and rice vinegar. Whisk together until well blended.
  2. Marinate the Cod: Place the cod fillets in a shallow dish and pour the marinade over them. Let it marinate for about 15 minutes.
  3. Preheat the Oven: Preheat your oven to 375°F (190°C) while the cod is marinating.
  4. Prepare for Baking: Line a baking dish with parchment paper. Place the marinated cod in the baking dish, reserving any leftover marinade.
  5. Bake the Cod: Bake the cod for 12-15 minutes, or until the fish flakes easily with a fork. Baste with reserved marinade halfway through.
  6. Garnish and Serve: Remove from the oven and sprinkle with toasted sesame seeds and scallions. Serve with lemon wedges.
