A warming dish of roasted cauliflower and spiced lentils, perfect for creating cozy memories around the table.

Ingredients

  • 1 head Cauliflower florets
  • 2 tablespoons Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • to taste Salt and pepper
  • 1 cup Red or green lentils
  • 2 cups Vegetable broth
  • 2 cloves Garlic, minced
  • 1 medium Onion, sautéed
  • 1/4 cup Fresh cilantro or parsley, chopped
  • 1 tablespoon Lemon juice
  • to taste Greek yogurt or tahini sauce

Instructions

  1. Preheat oven to 425°F.
  2. Toss cauliflower florets with olive oil, cumin, smoked paprika, salt, and pepper.
  3. Spread seasoned florets on a baking sheet and roast for 25–30 minutes.
  4. In a medium saucepan, heat olive oil and sauté diced onion for 3–4 minutes.
  5. Add minced garlic and cook for 1 minute.
  6. Stir in lentils and vegetable broth, then simmer for 20–25 minutes.
  7. Divide warm lentils into bowls, then top with roasted cauliflower and lemon juice.
  8. Sprinkle with chopped cilantro or parsley and add yogurt or tahini sauce.

Notes

Perfectly roasted cauliflower requires space on the baking sheet. You can vary the spices for different flavor nuances.
