A warm, cheesy casserole dish layered with shredded chicken, beans, bell peppers, and cheese, reminiscent of fajitas.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup bell peppers, diced
  • 1 cup onion, diced
  • 1 can black beans, rinsed and drained
  • 1 cup corn
  • 1 cup salsa
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Tortilla chips or tortillas for layering

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine shredded chicken with diced bell peppers, onion, black beans, corn, salsa, chili powder, cumin, salt, and pepper in a large bowl.
  3. Layer tortilla chips (or tortillas) on the bottom of a baking dish.
  4. Spread half of the chicken mixture evenly over the chips and sprinkle a layer of cheese.
  5. Repeat layering with the remaining chicken mixture and another layer of cheese on top.
  6. Bake in the preheated oven for 25-30 minutes until bubbly and cheese is melted.
  7. Cool slightly before serving for easier portioning.

Notes

Use rotisserie chicken for quicker prep; casserole can be frozen without cheese and baked later with cheese added.
