  • 2 ripe bananas (mashed)
  • 1/2 cup Greek yogurt
  • 1/4 cup honey or maple syrup
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 cup oat flour
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray with non-stick cooking spray.
  2. Mix the mashed bananas, Greek yogurt, honey or maple syrup, egg, vanilla extract, and cinnamon in a large bowl until well mixed.
  3. Whisk together the oat flour, baking powder, and salt in another bowl.
  4. Combine the dry ingredients with the wet mixture, stirring until just combined.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 18–20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool in the tin for a few minutes before transferring to a wire rack to cool completely.

Notes

Use overripe bananas for extra sweetness and moisture. You can add nuts or chocolate chips if desired.
