  • 1 cup All-Purpose Flour (or gluten-free flour)
  • 2 tablespoons Granulated Sugar (or coconut sugar)
  • 1 tablespoon Baking Powder
  • 0.5 teaspoon Salt
  • 1 cup Milk (or almond milk)
  • 2 large Eggs (or flax eggs)
  • 2 tablespoons Unsalted Butter (or vegetable oil)
  • 1 teaspoon Vanilla Extract

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a mini muffin tin.
  2. Whisk the flour, sugar, baking powder, and salt in a large mixing bowl.
  3. Combine the milk, eggs, butter, and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Fill each muffin cup until they’re three-quarters full.
  6. Slide the muffin tin into the oven and bake for 12-15 minutes.
  7. Allow them to cool for about 5 minutes before serving.
