  • 1 cup cottage cheese (Full-fat or 2% is best for stability)
  • 3 large eggs (Separated into whites and yolks)
  • 1/2 tsp baking powder (The secret to the ‘lift’)
  • 1/4 tsp cream of tartar (Optional, but helps stabilize the egg whites)
  • 1 tsp cinnamon
  • 1 tbsp granulated keto-friendly sweetener (like Monk Fruit or Erythritol)
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 300°F (150°C). Line a large baking sheet with parchment paper to prevent sticking.
  2. Blend the cottage cheese, 3 egg yolks, and vanilla extract in a blender until completely smooth.
  3. Whip the egg whites, baking powder, and cream of tartar in a clean bowl until stiff peaks form.
  4. Fold the egg whites gently into the cottage cheese mixture.
  5. Prepare the cinnamon swirl by mixing cinnamon and sweetener.
  6. Scoop the batter onto the parchment paper in 6–8 even rounds.
  7. Top the batter with remaining cinnamon-sweetener mix for flavor.
  8. Bake in the preheated oven for 25–30 minutes until golden brown.
  9. Cool the breads on the tray for at least 10 minutes before enjoying.
