Deliciously fluffy pancakes that evoke childhood memories of breakfast with family, perfect for a leisurely morning.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 tablespoons baking powder
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 2 large eggs (room temperature)
  • 1 3/4 cups milk (whole or 2% recommended)
  • 4 tablespoons butter (melted and cooled)
  • 2 teaspoons vanilla extract

Instructions

  1. Whisk the Dry Ingredients: In a large bowl, whisk together the flour, baking powder, sugar, and salt until well combined.
  2. Beat the Wet Ingredients: In a separate medium bowl, beat the eggs lightly. Add milk, melted butter, and vanilla extract, whisking until smooth.
  3. Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients and gently fold together until just combined.
  4. Heat the Skillet: Heat a non-stick skillet or griddle over medium heat and lightly grease if needed.
  5. Cook the Pancakes: Pour about ¼ cup of batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form and edges look set.
  6. Flip to Golden Perfection: Carefully flip pancakes and cook for another 1-2 minutes until golden brown on both sides.
  7. Keep Warm and Serve: Transfer cooked pancakes to a plate and keep warm in a 200°F oven while cooking the remaining batter.

Notes

Use a large skillet for cooking multiple pancakes at once. Ensure baking powder is fresh for optimal fluffiness.
