  • 2 cups cooked orzo pasta
  • 1 lb boneless, skinless chicken breasts
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese (Gruyere or Swiss)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the sliced onions and cook until caramelized, about 15-20 minutes.
  3. Add minced garlic to the skillet with the caramelized onions and cook for another minute until fragrant.
  4. In a large bowl, combine cooked orzo, chicken broth, heavy cream, caramelized onions, and diced cooked chicken. Season generously with salt and pepper, mixing well.
  5. Transfer the mixture to a greased baking dish. Spread it out evenly for a beautiful bake.
  6. Generously top the casserole with shredded cheese.
  7. Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
  8. Remove from the oven and let it rest for a few moments. Garnish with fresh parsley before serving.

Notes

To maintain creaminess, sprinkle a little water when reheating leftovers.
