A delightful fusion of French onion soup and creamy pasta, this dish is perfect for any occasion.

Ingredients

  • 8 oz pasta
  • 2 large onions, sliced
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 cups vegetable or beef broth
  • 1 cup heavy cream
  • 1 cup grated cheese (such as Gruyère or Swiss)
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook the pasta according to package instructions until it’s al dente. Drain and set it aside.
  2. Caramelize the onions by melting butter and olive oil in a skillet over medium heat and sautéing sliced onions until golden-brown (20-25 minutes).
  3. Add minced garlic and cook for another minute.
  4. Pour in the broth and allow it to simmer for about 5 minutes.
  5. Reduce heat and stir in heavy cream and grated cheese until melted and creamy.
  6. Combine cooked pasta with the sauce, tossing until well-coated.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with chopped parsley.

Notes

For perfectly caramelized onions, be patient and let them cook slowly. Store leftovers in an airtight container for up to 3 days.
