  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil, for frying
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried dill
  • 1 teaspoon parsley
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon milk (to adjust consistency)

Instructions

  1. Prepare the Ranch Dressing: In a small bowl, mix together the mayonnaise, sour cream, garlic powder, onion powder, dill, parsley, salt, and black pepper. Add 1 tablespoon of milk to thin the dressing to your desired consistency and pop it in the fridge.
  2. Set Up the Dredging Station: In a shallow bowl, combine the flour, cornmeal (if using), garlic powder, paprika, salt, and black pepper. In another bowl, whisk together the eggs and milk.
  3. Coat the Mushrooms: Dip each sliced mushroom into the egg mixture, then dredge it in the flour mixture, pressing lightly for good coverage.
  4. Heat the Oil: Heat vegetable oil in a large skillet or deep fryer to 350°F.
  5. Fry the Mushrooms: Fry the mushrooms in batches for 2-3 minutes per side, until golden brown and crispy. Avoid overcrowding the pan.
  6. Drain and Serve: Drain the fried mushrooms on paper towels and serve hot with the chilled ranch dressing on the side for dipping.
