  • 4 pieces Bone-in, skin-on chicken thighs
  • 6 cloves Garlic (smashed or minced)
  • 2 tbsp Olive oil (good-quality)
  • 2 cups Chicken broth
  • 1 cup Dry white wine or extra broth
  • 4 sprigs Fresh thyme
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 tbsp Chopped fresh parsley
  • Lemon wedges (optional)

Instructions

  1. Prepare your chicken by seasoning the thighs with salt and black pepper.
  2. Heat the olive oil in a large pot over medium-high heat.
  3. Sear the chicken thighs skin side down for 5-7 minutes until golden and crispy.
  4. Flip and sear the other side for an additional 3-4 minutes.
  5. Add the minced or smashed garlic to the pot to infuse its flavor.
  6. Pour in the chicken broth and dry white wine (or extra broth).
  7. Toss in the fresh thyme sprigs among the chicken.
  8. Braise at a gentle simmer, covered, for about 30 minutes.
  9. Finish by garnishing with parsley and serving with optional lemon wedges.
