  • 3 large chicken breasts, diced
  • 4 medium russet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced chicken, season with salt and pepper, and cook until browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  3. Sauté the minced garlic for 1 minute in the same skillet, allowing the flavors to bloom.
  4. Add the cubed potatoes and cook for 5-7 minutes, stirring occasionally, until they’re lightly golden.
  5. Pour in the chicken broth and heavy cream, then stir in the thyme and rosemary. Bring to a simmer.
  6. Cover and cook for 10-12 minutes until the potatoes are tender.
  7. Stir in the cheddar and Parmesan cheese until melted and creamy.
  8. Return the cooked chicken to the skillet and mix. Cook for an additional 2-3 minutes until hot.
  9. Sprinkle with chopped parsley and serve warm, straight from the skillet.
