Ingredients

  • 1 tablespoon vegetable oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 cups vegetable broth
  • 2 bunches baby bok choy, halved
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Salt to taste
  • Pepper to taste
  • Optional: ½ teaspoon chili flakes for garnish

Instructions

  1. Heat the vegetable oil in a medium pot over medium heat.
  2. Add the minced garlic and grated ginger, sautéing for 1–2 minutes until fragrant.
  3. Pour in the vegetable broth and bring to a gentle boil.
  4. Add the halved bok choy to the pot, reduce the heat to low and let it simmer for 5–7 minutes.
  5. Stir in the soy sauce and sesame oil, then season with salt and pepper to taste.
  6. Ladle the soup into bowls and sprinkle with chili flakes before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat on the stove or in the microwave, adding broth if it thickens.
