  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup fresh parsley, chopped
  • 3 cloves garlic, minced

  • 2 large eggs
  • 1/4 cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup garlic powder (for seasoning on top)
  • 1/4 cup additional grated Parmesan cheese (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. Combine the ground chicken, breadcrumbs, 1/2 cup grated Parmesan, mozzarella, parsley, garlic, and chopped onion in a large bowl.
  3. Whisk together the eggs, milk, Worcestershire sauce, Italian seasoning, salt, and black pepper in a separate bowl.
  4. Pour the egg mixture into the bowl with the chicken mixture and gently mix until combined.
  5. Transfer the mixture to the prepared baking sheet or loaf pan, shaping it into a loaf.
  6. Mix together the garlic powder and additional Parmesan cheese, then sprinkle it over the top of the meatloaf.
  7. Bake for 45-50 minutes or until the internal temperature reaches 165°F (74°C).
  8. Remove from the oven and let it rest for about 10 minutes before slicing.
  9. Serve warm with your favorite sides.
